

Avocado Toast,
a breakfast / brunch staple. Now I’m not claiming to be making anything ground breaking here, but this is my favorite way to make breakfast special. Here’s to inspiring you to switch up your breakfast favorite.
The combo of a high quality bread, fresh dill and poached egg really takes the cake here. Add bacon or leave it meatless, both will leave you wanting more.

If you’re adding meat, start off with frying your bacon. Two pieces should be enough for one avocado toast, but who doesn’t like a little extra.
Extra crispy, every time.

Next up, poaching your eggs. Start by boiling about 2 cups of water. Bring it down to a medium heat and add 1 tbs of white vinegar. Slowly add in your egg and cook for 3.5 to 4 minutes depending on how gooey you want the inside. (I am a 4 minute girl myself)
I’ve seen lots of videos on spinning the water, straining the extra yoke.. etc. I am an easy peasy kind of girl and find this simple method works just fine for an at home poached egg.

Let’s talk bread. Treat yourself and find a high quality bread shop / bakery in your area – makes for such a fun Saturday morning activity. If that’s not in your wheel house, Whole Foods has a great bakery for some yummy breads.
Toast that bread and set it to the side for assembly.

Let’s start assembling! Smash that avocado right on the toast, no need to dirty another bowl. Add a f** ton of salt and pepper or any other spices you’re feeling. (Garlic salt, red pepper flakes are some others to try)

If you opted in for bacon, nows the time to layer it on.
Other options for this step could be ham, crumbled feta or cottage cheese!

Add on that poached egg, drizzle with some olive oil, top with your dill & flakey salt. And your done! Enjoy this yummy treat with some Saturday morning coffee!

Perfect Poached Egg Avocado Toast with Fresh Dill.
Ingredients
- 1 slice Sourdough Whole Foods has a great bakery section
- 1 medium Avocado
- 1 large Egg
- 2 slices Bacon
- 1 tsp Fresh Dill
- 1 tsp Olive Oil
- 1 tsp White Vinegar
- Salt & Pepper to Taste
Instructions
- Fry off your bacon - extra crispy
- Boil 2 cups of water, once boiled turn heat to medium and add in your white vinegar. Slowly add your egg and let cook for 3½ minutes for runny, 4 minutes for gooey perfection.
- While your eggs are cooking Toast that bread until crispy.
- Build your toast. Smash that avocado over your bread and salt & pepper it up. Lay your bacon then add your egg. Top with some olive oil, dill & flakey salt.
- Enjoy!
