Sprinkle Sugar Cookies with Cream Cheese Frosting

Ingredients
  

Sprinkle Cookies

  • 2 ¼ cups all-purpose flour
  • ¼ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup + 2 tbsp 6 oz unsalted butter, softened
  • ½ cup granulated sugar
  • ¼ cup light brown sugar packed
  • 1 egg
  • 2 tsp vanilla extract
  • ½ cup sprinkles plus extra for topping

Cream Cheese Frosting

  • 6 oz cream cheese softened
  • 5 tbsp unsalted butter softened
  • tsp vanilla extract
  • Pinch of salt
  • 2 cups powdered sugar

Instructions
 

Prepare the Dough

  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, beat the butter, granulated sugar, and brown sugar on medium-high speed for 3 minutes, until light and fluffy.
  • Mix in the egg and vanilla extract until fully incorporated.

Combine & Chill

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in ½ cup of sprinkles gently.
  • Cover and chill the dough for 15 minutes while preheating the oven to 350°F (175°C).

Bake the Cookies

  • Line baking sheets with parchment paper. Scoop tablespoon-sized balls of dough and place them 2 inches apart.
  • Gently press extra sprinkles onto the tops of the cookies.
  • Bake for 9–11 minutes, until the edges are set but the centers still look soft.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Make the Frosting

  • Beat the cream cheese and butter until smooth and fluffy.
  • Mix in the vanilla extract and salt.
  • Gradually add powdered sugar, beating until light and creamy.

Assemble

  • Once the cookies are fully cooled, spread or pipe frosting onto each one.
  • Top with additional sprinkles and enjoy!
