Instructions
Prepare the Dough
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, beat the butter, granulated sugar, and brown sugar on medium-high speed for 3 minutes, until light and fluffy.
Mix in the egg and vanilla extract until fully incorporated.
Combine & Chill
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in ½ cup of sprinkles gently.
Cover and chill the dough for 15 minutes while preheating the oven to 350°F (175°C).
Bake the Cookies
Line baking sheets with parchment paper. Scoop tablespoon-sized balls of dough and place them 2 inches apart.
Gently press extra sprinkles onto the tops of the cookies.
Bake for 9–11 minutes, until the edges are set but the centers still look soft.
Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Make the Frosting
Beat the cream cheese and butter until smooth and fluffy.
Mix in the vanilla extract and salt.
Gradually add powdered sugar, beating until light and creamy.
Assemble
Once the cookies are fully cooled, spread or pipe frosting onto each one.
Top with additional sprinkles and enjoy!
